Baked BBQ Chicken

Bone-in chicken thighs or legs baked low with garlic powder, then finished with a generous coat of BBQ sauce. Three ingredients, two steps.

  • 2.5 lb bone-in chicken thighs or drumsticks (bone-in is the point — don't sub boneless)
  • 2 tsp garlic powder
  • 1.5 cup prepared BBQ sauce

Steps

  1. Preheat oven to 350°F (175°C).
  2. First bake (covered). Place the chicken in a shallow baking dish in a single layer. Sprinkle with garlic powder. Cover with foil and bake for 1 hour.
  3. Drain. Pull the dish out and pour off any rendered fat.
  4. Sauce and finish (uncovered). Pour the BBQ sauce evenly over the chicken. Return uncovered to the oven and bake another 30 minutes.

Notes

  • Bone-in is non-negotiable. Boneless dries out over the long covered bake — the bone keeps the meat juicy through the full 1.5 hours.
  • Sauce choice carries the dish. Three ingredients means the BBQ sauce is doing most of the flavour work — pick one you actually love.
